What is N-Acetyl Carnosine?

N-Acetyl carnosine (NAC) is a naturally occurring compound with a chemical structure similar to the dipeptide carnosine. The molecular structure of NAC is identical to that of carnosine, except for an additional acetyl group.

Acetylation protects NAC from degradation by carnosinase, an enzyme that degrades carnosine into its constituent amino acids, beta-alanine, and histidine.
